Pumpkin Bisque with Wild Rice Soup


There is nothing more that says Fall than pumpkin soup.   It's definitely soup weather here in the Northwest so we decided to whip up a batch of this hearty, comfort soup to keep us warm on these cold days.    The one thing the Chicks believe in are organic ingredients.  We try to find the naturalist of ingredients so that are bodies are filled with less additives to keep us healthy.

Ingredients:

2 cups chopped white or yellow onion sauteed to a golden brown (Nonnie always says sauteing your onions first to a golden brown will add more flavor to any dish!)
2 cans canned pumpkin, not pie filling
3 1/2 cups cold water
4 cups lower-sodium chicken broth  
1` tsp ground Cumin (we added a little more cumin in to our liking)
1 tsp dried Oregano
1 tsp light brown sugar
3 cans white beans of your choice
3/4 cups cooked wild rice
2 tsp cooking wine, optional
1/2 cup half and half
1/4 cup Parsley
Salt and pepper to taste

Directions:

Begin bringing pot of water to a boil on high setting for the rice.  In a separate pot begin by sauteing the chopped onion until golden brown.  Then throw in all ingredients except the cream, parsley and wild rice.  Begin heating those ingredients on a low to medium setting.  When the water comes to a boil in the other pot, pour the wild rice in.  After the rice has softened, strain then add it to your mixture in the other pot with rest of ingredients.  Begin stirring in half-and-half slowly until thoroughly mixed.  Once the soup is heated through, serve and garnish with parsley!



Nonnie always says saute those onions to a golden brown!

We even had an audience that came with wagging tails and drooling tongues

Now remember, life doesn't always go by rules so if you want to add more salt or pepper or peanut butter by all means!  Add what you think will make this dish better for YOU.  Being creative is the key to being Enchanted!

Help me....I think I've fallen in love with my s'more

S'mores aren't just for kids anymore.  Try The Enchanted version and you'll never go back!

Here's the secret recipe...

Sit under a full moon...
Take an extra-dark chocolate biscuit cookie (such as Petit Ecolier...the kind with chocolate on one side of the biscuit)...
An evenly toasted marshmallow just starting to melt on the inside...
And a glass of your favorite red wine...

Place the toasted marshmallow on top of the chocolate side of the cookie so the chocolate melts to perfection.  Take one bite of your s'more, chew for a moment, take a sip of your red wine and enjoy the ecstasy.

Nonnies Cooking from the Heart

Some say cooking is a chore.  Some say cooking is too stressful.  Some even say cooking takes too long to get to the end product, but for Italians cooking comes from the heart!   That’s where Nonnie’s cooking came from.   Nonnie was an extraordinary cook whose family took great pleasure in her lovingly prepared meals. A meal was not complete without a fabulous dessert and there were always cookies in the cookie jar.  She believed sitting down and eating meals together (which we might add is something that seems to have gone extinct) was the bond that brought families together on top of enjoying GREAT food and come on, ya gotta love food!





A quote from the book Eat, Pray, Love said it best... "I love my pizza so much, in fact, that I have come to believe in my delirium that my pizza might actually love me, in return. I am having a relationship with this pizza, almost an affair."




And this relationship has no drama!  Nonnie’s recipe box is filled with recipes from generations past.   In fact, the Enchanted Chicks have decided to attempt to cook some of these coveted recipes every now and then and share with all of you.  We can only try to cook as well as Nonnie did.  We know it won’t be exact because Nonnie’s heart is like no other!   So…welcome to Nonnie’s Cooking from the Heart.   We know you'll love the first one, so stick around!

Vintage Chick:   I couldn't get enough of her tea cakes!  The dogs loved 'em too.  Lol!
